Baked Aubergines with Tomatoes and Mozzarella

Baked Aubergines with Tomatoes and Mozzarella such an easy and healthy meal to make! Just make a quick salad to go with this and perfect!
The juices from the Aubergines just burst in your mouth!    Baked Aubergines

Ingredients –

Olive oil
2 x aubergines
Jar of pasta sauce such as Dolmio or Lloyd Grossman
1 x ball of mozzarella
Seasoning (as much as you wish)

1. Preheat the oven on Gas mark 6.  Oil the trays with the foil on. Cut the aubergines in half length ways.

2. Place the aubergines on the trays and pour a little oil all over aubergines. Place in the oven for 25 minutes.

3.  Once the 25 minutes are up and the aubergines are nice and soft in the middle, add some pasta sauce on tops of the aubergines and add some of the mozzarella on top too.

4. Place back into the oven for another 5 minutes.

Take out of the oven and your lovely Baked Aubergines with Tomatoes and Mozzarella is done! Serve!
