Banana and Walnut Muffins
Ingredients:
50g Lucy Bee Coconut Oil
75g light brown sugar
2 eggs
225g plain gluten free flour
2 tsp (10/15g) baking powder
4 or 5 ripe bananas
Small handful of walnuts, broken into pieces
Method:
Preheat oven to 180 C, 350 F, gas mark 4.
Place all the ingredients into a mixing bowl, use an electric whisk to mix together until smooth. Add the walnuts to the mixture and stir in.
Bake in preheated oven for 25 to 30 minutes or until muffins spring back when lightly tapped.
Makes approximately 8 muffins.
