Cod With Pesto possibly the most easiest fish dish to make! With amazing juices from the Pesto!
This works just as well with frozen fish too!
Ingredients –
Pesto – 1 tea spoon of Pesto per fish.
Fish – up to you on how much you choose to cook.
Salt and Pepper for seasoning
1 Lemon
Optional –
A couple of chopped tomatoes.
Method –
1. Pre heat the oven to Gas Mark 6. Get some foil and put the fish in it and add 1 tea spoon of Pesto and if you want add some chopped tomatoes, only a couple. Season it with Salt and Pepper and then drizzle with some lemon juice.
2. Make a little parcel with the foil, so the fish is inside and tucked in, like this –
3. Put the fish parcel’s in the oven for 25 minutes. Once they are cooked add the parcel to a plate and serve!
